Fillet knives are designed to be thin and flexible giving you great control and precision. I have used the 8 inch version and really like it. I am anticipating the 6 inch to be just as good with a little more control for the fine cuts
This is the best all around knife we have ever purchased. We got out first one a couple of years ago at an Academy Store in Wichita Falls. We were not able to find the same thing in our store in Lubbock so I found it on the internet and ordered it. We use it at the lake when cutting up fish. But I also love to use it in my kitchen at home.
