Fillet knives are designed to be thin and flexible giving you great control and precision. Doesn't get much better for you dollar than this. Fantastic knife for porgy and seabass filleting. I use the bigger version for larger species.
Excellent knife! I own both the 7 and 8 inch flex filet knives and they see a lot of work on fish on vacation. The 7" was very popular at home with my two girls 26 and 28 for taking chicken breasts apart. They wished, though, for a shorter, slightly thicker but still flexible blade. This is it, a very nice tool in the kitchen and on the fillet table. Bought one for myself for fishing and after testing it ordered two more for my girls for their kitchens. Fishbone is a wonderful company to deal with.
